Really wanting to bring gain down in the 3rd channel, I hear a popular mod for this is to cut c16 & c30, can anyone tell me what exactly those caps do before I rip'em out?? Thank you

Both are cathode bypass caps, they increase gain to maximum in that stage at most frequencies. Snipping those will lower gain. You can also increase the cathode resistor values to lower gain (decrease asymmetrical clipping). R45 and R56.
